This family recipe has been handed down from Billee Barton Corn. Billee frequented Luby’s cafeteria often with friends and coworkers.
English Pea Salad Like Luby’s Cafeteria
2 cans seasoned sweet peas
2 eggs, hardboiled and chopped
1/4 to 1/2 cup Miracle Whip
2 tablespoons sugar
1/2 small onion, chopped fine
1 tablespoons pimiento, chopped
1/4 to 1/2 cup cheese, cut into squares
Cook peas as usual, using seasonings and margarine; drain well. To chopped eggs, add salt and pepper to taste.
Separately, to Miracle Whip, add sugar, then mix with eggs. Mix with peas. Add all other ingredients and mix well. Put cubed cheese in last and stir.
Billee Barton Corn loved to feed people! Virtually all of her recipes were collected from friends or newspaper clippings. But she made them well and always knew everyone’s favorites. She was the mother of 3 children and lived from 1918-2010. Billee was my paternal grandmother.
