
Grandma Billee was well known for her delicious cooking. I remember having this salad as a side dish with several of the meals she served.

Orange-Avacado Salad
1 med head lettuce, torn, about 6 cups
1 small cucumber, thinly sliced
1 avacado, peeled and sliced
1 11 oz. Can mandarin oranges
2 Tbls sliced green onions
In large salad bowl, combine lettuce, cucumber, avacado, oranges, and onion. Just before serving, pour on dressing and toss.
For dressing:
½ teas grated orange peel
¼ cup orange juice
½ cup salad oil
2 Tbls sugar
2 Tbls red wine vinegar
1 Tbls lemon juice
¼ teas salt
Combine in screw top jar. Cover tightly and shake well.
